A different approach from our "Cuvée de Reserve" - where we are looking for consistent quality, Millésime expresses the distinct character of an exceptional vintage - the rare years of near perfect growing conditions.
The grapes from our favorite section of the Chardonnay vineyard -named as “Les maliva”- are picked at full maturity to bring an exceptional freshness and an aromatic finesse, while our finest Pinot Noirs are reserved to complete the assembly of this blend.
Partly vinified in oak barrels, this wine shows great elegance and complexity, balancing freshness and a light note of brioche.
At least 7 years of ageing in the Fallet-Dart cellars are needed to obtain this distinguished millésime champagne, time works its magic and it reaches a full-bodied maturity.
The result is a champagne of connoisseurs that could be enjoyed with your finest fish and shellfish.
Blend: Chardonnay: 70%, Pinot Noir: 30%
Fermentation: Alcoholic and Malolactic in stainless steel tanks and oak barrels
Ageing: 7 years
Post disgorging resting period: 8 – 12 months
Recommended keeping time: 5 years
